Chauncy's Bar & Grille
CHEF BILL KIRBY IS ONE OF THE CAPE’S BEST KEPT SECRETS
What do Nelson Mandela, Aerosmith, and Ted Williams all have in common?
Chef Bill Kirby from the Heritage House Hotel’s Chauncy’s Bar & Grille has
cooked for all of them. And the list doesn’t stop there. Arnold Schwarzenegger, Mikhail Gorbachev, Don Henley, the Celtic’s John Havlicek, as well as baseball’s Roger Clemens, and Harmon Killebrew. Actors, politicians, musicians, sports figures, designers, financial moguls, the list goes on and on. So what is he doing at the Heritage House Hotel and why haven’t you heard about him? Kirby likes it that way.
Chauncy’s Bar & Grille offers familiar food, exceptionally prepared. Our Talented Chef selects only the finest local seafood and a sumptuous variety of the highest quality meats and choicest vegetables to create delicious, mouth watering entrees. His years in catering have taught him to adapt and improvise. Chef Kirby’s talents are enthusiastically praised by his loyal patrons who tend to like to keep Kirby to themselves. Kirby started working in his family’s restaurant in Easton, Massachusetts, at the age of 14.
He refers to his formal culinary training as “on the job training” during the 20 years he was with the restaurant. Over the next eight years Kirby worked on incredible events such as dinners for 3,000 people at the State House for the Tall Ships, the rededication for the JFK Library in Boston, a Boston Public Library fundraiser for 700 people, not to mention fashion shows for Armani and Laura Ashely, mall openings for over 2,000 people, and corporate functions for J.P. Morgan, Fidelity, Putnam, and Gillette.
